Ingredients

  • 8-10 chicken pieces; thighs and drumsticks
  • 1 tablespoon salt
  • 1 tablespoon ground black pepper

For the Marinade

  • 1 cup buttermilk
  • 1/4 cup pickle brine
  • 2 tablespoons Louisiana-style hot sauce
  • 1 large egg

For the Flour

  • 2 cups all-purpose flour
  • 2 teaspoons fine table salt

For the Pepper Sauce

  • ¼ cup butter
  • 1/4 cup vegetable shortening
  • 2 tablespoons cayenne pepper
  • 1 tablespoon packed dark brown sugar
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 cup vegetable oil for frying, or as needed

Instructions

  1. In a large bowl toss and coat chicken pieces with 1 tablespoon salt and pepper. In a separate large bowl combine buttermilk, pickle brine, hot sauce, and egg and mix. Pour marinade over chicken and mix each piece until thoroughly coated. Cover and let chicken marinate in refrigerator at least 4 hours (or overnight).

For the Flour

  1. Combine flour and salt together in a shallow flat dish and mix. Remove chicken from marinade and wipe off excess milk off chicken, while still reserving marinade in the bow. Toss chicken in flour until thoroughly coated.
  2. Lightly coat all sides of the chicken with marinade, allowing excess to drip back into the bowl. Coat chicken once again in flour mixture and let rest on a wire rack for 15 minutes before cooking. Repeat with the rest of the chicken pieces.

For the Pepper Sauce

  1. Place butter and shortening in a large pot over medium heat. Add cayenne pepper, brown sugar, paprika, garlic powder, kosher salt, and black pepper. Stir until fats melt; remove from heat and keep warm.

Cooking

  1. Fill a deep pot with vegetable oil; filling it about half way. Heat oil to 350 degrees Fahrenheit over medium-high heat. Carefully place chicken into hot oil with tongs or a slotted spoon. Fry until instant read thermometer reads 160 degrees Fahrenheit internally, about 10-12 minutes.
  2. Transfer chicken to a rack to drain. Brush with the pepper sauce on both sides, making sure to also get within the crevices of the thighs. Serve and enjoy.
